For the uninitiated, Momos are Indian snacks that can be found in every street food outlet present in the different parts of the country. However, the original dish of momos originated in Tibet, where the dish is mostly vegetarian and prepared by using different vegetables. With time, this dish spread out to neighboring areas of India and China, where a big proportion of the population is non-vegetarian. Here the momos evolved into different non-vegetarian types adapting to the local taste and food culture. The recipe accordingly also changed to suit the taste preference of these areas. One of the most popular varieties of the non-vegetarian momos is chicken momos, which is very popular in almost all parts of India.

 

Although India also has a very high percentage of the vegetarian population and vegetarian momos are also very popular in India, but here we are going to restrict our discussion only to chicken momos recipe. The recipe for chicken momos, which we are going to describe here is not just tasty, but also very easy to prepare, even by people who do not know much about cooking.

 

Momos are very popular in north India & eastern India, where multiple varieties of these are available.  In these places, it is also available in most eateries or small restaurants, where it is sold as snacks. However, as we have already said that when a food dish and recipe moves from one place to another, it changes due to local adaptations made by people depending on individual choices and preferences. A) For the Stuffing

1) Minced Chicken – 300 gm

2) Black Pepper Powder – ½ teaspoon

3) Salt – ½ teaspoon

4) Water – 1 cup

5) Onion – 1 of large size

6) Garlic Cloves – 10 of large size

7) Green Chili – 1(finely chopped)

8) Carrot – 1 small size (grated)

9) Vinegar – 1 teaspoon

10) Soy Sauce – 1 teaspoon

11) Sugar – ½ teaspoon

12) Edible oil (preferably white) – 2 tablespoons

13) Wild Celery – a small pinch

14) Capsicum – 1 (finely chopped)

15) Normal water for steaming – 1 liter

B) For Making Dough

1) White Flour – 2 cups

2) Baking Powder – 1/4th teaspoon

3) White oil – 1 tablespoon

4) Salt – A small pinch

5) Water – As per requirement.

How to Prepare Chicken Momos at Home

Preparation of the Stuffing

  • The minced chicken is washed 2 to 3 times in water. Salt is next mixed with it.
     
  • 4 large garlic cloves are grated and kept aside.
     
  • Now a pan is put on a medium flamed burner and 1 tablespoon white oil is put on it. Once it gets warmed grated garlic is added to it and allowed to be fried for ½ minutes.
     
  • Next, the minced chicken is put in the pan and stirred nicely till the minced chicken begins to change its color. Now black pepper powder is added and it is sautéed again, till the water exuding from the chicken gets dried up.
     
  • Next water is added to the preparation and the whole mixture is transferred to a pressure cooker, its lid is closed and it is allowed to boil in a low flame.
     
  • After 8 whistles (from the pressure cooker), the burner is switched off and the pressure cooker allowed to cool in the room temperature. Once cooled, the lid of the pressure cooker is opened and the boiled chicken is transferred to a pan.
     
  • Now a karahi (a non-stick pan) is put on a low flamed burner & 1 tablespoon oil is added to it.
     
  • The leftover 6 large-sized garlic cloves are chopped finely and kept aside.
     
  • When the oil gets warmed then a pinch of wild celery is added in it and allowed to be fried for 2 minutes. Then chopped onions are added to it and sautéed for ½ minutes till its color starts changing. Then chopped garlic pieces are added to it and sautéed again for 1 to 2 minutes. Next grated carrots are added to it and the mixture stirred constantly till water of the carrot evaporates.
     
  • Next chopped capsicum, chopped green chili & vinegar is added to the mixture and stirred for 1 minute. Now the previously prepared minced chicken mixture is added to the preparation and the whole mixture is uniformly mixed. Stirring is continued till the preparation becomes dry in consistency.
     
  • Now sugar and soy sauce are added to the preparation & all components mixed properly as the burner is switched off. The salt content is checked if it is less, then the required amount of salt is added as per requirement and mixed uniformly into the preparation. The preparation is allowed to cool down. The stuffing is ready now.

Preparation of the Dough

  • The baking powder and flour (in the amount mentioned previously) is mixed nicely in a deep vessel. A pinch of salt and 1 tablespoon oil is added to the mixture. Then a hard dough is made by adding water as per requirement. Next, the container having the dough is covered for 10 minutes, so the dough does not get hard.
     
  • After 10 minutes, a small amount of dough is taken out and rolled into round shaped puri, which basically forms the main base of chicken momos.

  • Now one such “puri” is taken and held in one hand. By another hand, the chicken containing stuffing is placed in the middle area of the puri, and the other half empty portion of puri is folded on the stuffed portion so that the empty half portion covers the stuffed portion.

  • The open edges are pressed together, so that the whole thing takes a semi-circular structure, with the chicken stuffing staying firmly within the prepared uncooked raw momos, firmly sealed on all sides by the flour base.

  • In this similar manner, multiple small raw uncooked momos are prepared, according to the amount of dough present & pieces desired.

 

Chicken Momos Preparation by Steam Heating

  • Once the raw uncooked chicken momos are prepared, the next step is to cook it for eating purpose by steam heating.
     
  • For preparing chicken momos by steam heating; a steamer, rice cooker or even a simple pressure cooker can also be used. However, people who are new to cooking and do not have all the above-mentioned items, they can use another simple method as described below.
     
  • Those who are new to cooking and do not have sophisticated accessories for cooking can use a deep vessel pan (containing 1-liter water) placed on a medium flamed burner. A normal metallic sieve is now put on top of it, which is of same size and shape as that of container’s open edge and hence fits perfectly.
     
  • Now some edible oil is rubbed over the metallic sieve layer by a brush.
     
  • The water of the container is allowed to boil properly. Once the water starts boiling, the raw momos are placed one by one on the sieve. It should be kept in mind that the momos should not touch each other.
     
  • The open upper side of the metallic sieve is covered with a plate and the sieve is kept over the boiling water for 20 minutes. The radiating heat of the steam cooks the raw momos and oil applied previously on the sieve ensures that the raw uncooked momos do not adhere to the metallic sieve and gets burned.

  • Once 20 minutes are over, the burner is switched off and the metallic sieve with the cooked prepared momos are kept separately, after removing the plate covering the sieve.
     
  • The chicken momos are now thoroughly cooked and ready to be served for consumption. Chicken momos taste best when served along with tomato sauce or momos chutney.

  • Here we are describing recipe of chicken momos chutney in brief, as Chicken momos made in home tastes best when you prepare the chutney in your home, so the taste of the momos increases manifolds.
     
  • In a pan, 1 tablespoon oil is taken. It is allowed to get warmed over a medium flamed oven. One chopped onion is fried on the pan. Next 6 to 7 cloves of garlic, 1 green chili (chopped), 1 large tomato (chopped), ½ piece of capsicum are added and fried till it takes the consistency of paste.
     
  • Next ½ cup water, 1 teaspoon sugar, ½ teaspoon salt, 1 teaspoon soy sauce and ½ teaspoon Ajinomoto is added into it. It is allowed to get little warm, then the whole preparation is transferred into a mixer and ground. Chicken momos chutney is now ready.
