Actually, the meaning of the word “bhurji” is scrambled. So, the main item of this recipe is scrambled paneer (cottage cheese). This is a dish mostly prepared in northern India, but thanks to its taste and food value, the love for this dish has spread all over the country. For all those who are thinking as to how to make Paneer Bhurji at home, a word of caution. The most important among ingredients for Paneer Bhurji is the paneer or the cottage cheese. So, to get the best of taste and softness in consistency, a homemade paneer should ideally be used.

 

Paneer Bhurji recipe has been modified in different ways to create different kinds of Paneer Bhurji, that are popular in different parts of the country. Some people add different vegetables in it, whereas others may add – cheese, different types of sauces, eggs, minced chicken, etc. However, our Recipe for Paneer Bhurji is the Paneer Bhurji in its simplest form, which can be prepared even by the beginners, within their home.

Ingredients for Paneer Bhurji Recipe

1) Ready-made fresh paneer (Cottage cheese- 200 grams)

                           OR

For making Paneer at home – Milk (1 liter) & Lemon juice of 1 full lemon

2) White edible oil/Butter – 2 tablespoons

3)Onion – 1 large size

4) Ginger – ½ inch long (made into a paste in a grinder)

5) Garlic – 7 to 8 cloves (made into a paste in a grinder)

6) Green chili – 1 of large size

7) Tomato – 2 of medium size

8) Cumin seeds – 1/4th teaspoon

9) Kasuri methi (Dried Fenugreek leaves) powder – 1/4th teaspoon

10) Pav Bhaji masala powder – 1 teaspoon

11) Garam masala powder – ½ teaspoon

12) Salt – 1/4th teaspoon

13) Sugar – 1/4th teaspoon

14) Coriander leaves – 10 grams

How To Make Paneer Bhurji at Home

  • Here in our recipe for Paneer Bhurji, we have used fresh paneer. It is prepared by boiling 1-liter milk in a pan on a medium flame burner. When the milk starts to boil then into it, is squeezed lemon juice obtained from 1 full lemon. The flame of the burner is turned low & the milk is stirred for 2 minutes. When the milk starts to curdle then the burner is switched off.

  • The milk is allowed to settle for 10 minutes. After this, a clean cotton piece of cloth is taken on a colander and the curdled milk is poured on it so that the liquid drains out as the paneer settles on the cloth as a residue.

  • Now the ends of the cloth are held together and a knot tied so that the paneer is held inside a sac. This sac is kept in a hanging position for 15 minutes. After that the tight cloth sack is taken off the hanging position, the knot untied and the paneer present inside is taken out and is crushed by a light hand and kept aside.
     
  • Next onion, tomatoes, green chilly & coriander leaves are chopped separately into fine pieces and kept aside.
     
  • Now a pan containing oil/butter in the amount as described earlier is put on a low medium flame burner. Here it would be important to mention that the final dish produced, tastes much better when butter is used instead of oil. The oil/butter is allowed to get warm.
     
  • Once the oil/butter gets warmed, cumin seeds are put into the pan. Once cumin seeds color starts changing, then chopped onion is added to it and stirred, till the onion pieces take a glossy appearance. Next ginger & garlic paste are added and stirring continued, till the pungent smell disappears.
     
  • Next chopped tomatoes and green chili are added to the same pan, followed by the previously mentioned amount of salt and stirring continued. Salt makes tomatoes soft, so the stirring is continued till all the tomato pieces present in the mixture gets softened.
     
  • Next pav bhaji masala powder and garam masala powder are added to the preparation and sautéed for 2 minutes. All the ingredients are mixed uniformly.
     
  • Next crushed paneer and sugar are added & mixed thoroughly with the previously present ingredients. Stirring continued for 2 minutes, and not more than that. Later the burner is switched off.

  • Kasuri methi (Dried Fenugreek leaves) powder and finely chopped coriander leaves are added to the preparation and mixed nicely. Paneer Bhurji is ready now for consumption.
     
  • Paneer Bhurji can be served hot along with paratha, roti, nan, jeera rice, bread or puri.
