1) Flour – 100 gm

2) Cornflour – 50 gm

3) Carrot – 50 gm

4) Sprouted Green Gram (Moong dal in Hindi) – 100 gm

5) Tomato – 1 Large sized

6) Garlic – 3 to 4 cloves

7) Onion – 2 in number

8) Green Chilli – 2 in number

9) Cucumber – 1 in number

10) Capsicum (Shimla Mirch in Hindi) – 1 in number

11) Paneer (Milk curd cheese) – 100 gm (Optional)

12) Scrambled Egg – 2 (Optional)

13) Water – As per requirement

14) Salt – 1 Tablespoon

15) Oil – 1 cup

16) Ghee – 2 Tablespoon

17) Soya Sauce – 2 teaspoon

Spring Roll Recipe – How to make spring rolls easily at home ?

  • Green gram (Moong dal) should be soaked in water for 5 to 6 hours. Then they are put in a thin and clean handkerchief. A knot is tied in such a way, that the contents take a shape of a sack, which is closed from all sides and the pulses are well contained in the piece of cloth. It is hung in a cool place. After 1 day, the sprout comes out from the pulses.

 

  • Next attention is directed towards the vegetables. All these are cut into small fine pieces. Before doing the same with Cucumber, the inner seed containing portion is removed.

 

  • Now 1 tablespoon oil is put on a pan kept over the low flamed oven. When the oil gets hot, chopped garlic is added to it and fried a little bit. Next sprouted green grams are added and the contents stirred continuously. Later a little salt, chopped green chili pieces, finely chopped capsicum & tomato are added and stirred for another 3 to 4 minutes till the contents become dry.

 

  • The pan is taken off the oven and the contents allowed to cool down. Once they are cooled, the contents are mixed with very finely chopped onion, grated carrot, cucumbers and finally soya sauce. One important thing that has to be remembered in this preparation is that in Spring Roll Recipe Vegetable choice depends a lot on individual preference.

  • For those who like the taste of egg, an added step as discussed can be used (which is totally optional). 2 Eggs are broken and contents poured into a bowl. A little salt is added, as per taste. The contents are beaten nicely for 2 to 3 minutes. In a pan, 1 tablespoon oil is taken and allowed to get warm, by switching on the oven. The egg contents are next poured into it and stirred constantly. A scrambled egg preparation is obtained. The pan is removed from the fire & contents are allowed to cool down. Later this is mixed with the green gram & rest of the mixture prepared previously. Some other people, who are fond of Paneer (Milk curd Cheese) or are vegetarian, they can replace the egg with crushed paneer & mix it to the mixture previously described. Salt according to taste is mixed and the mixture kept aside. In our preparation here, we have used only egg (and not Paneer).

 

  • In a bowl, flour & cornflour is taken together. Ghee is added to it along with a pinch of salt and the whole thing is mixed nicely with hand. Slowly water is added to it and a smooth but thin batter is made. On a non-stick pan, a little oil is put and the surface of the pan greased nicely. Next, the pan is placed on a medium flamed oven. Now on a ladle, one big serving of batter is taken and spread thinly on the pan, to give a circular Chapati like shape.

 

  • Next, a little portion of the previously prepared stuffing mixture is put longitudinally in the center portion of this chapati like preparation.

  • The 2 opposite sides are folded a little bit, so the flap portion of two sides overlaps on the stuffed mixture.

  • Now on the remaining 2 sides, one edge is folded from one side to another. The wrapping should be tight.

  • Next, the remaining open side can be closed by application of little batter on the open edge.

  • Now fry this preparation by putting it in a frying pan containing oil (the frying is done from all sides), till it becomes golden brown in color. Now Spring roll is ready for consumption, which can be served along with tomato sauce.
