The Taste that Lasts a Lifetime - How to Prepare Chicken Biryani?

This tasty Indian dish comes straight from the kitchen of the former Mughal emperors, who ruled India for more than 300 years. The emperors & royalty and their kin were very avid food lovers, especially regarding non-vegetarian dishes and they left a rich legacy in the culinary richness of India. The chefs of the time, experimented with different ingredients & variety of preparation methods, creating dishes with many different presentations.

 

Chicken Biryani although is a very old dish, but is still favored by peopleall-over modern-day India. For all practical purpose, it can be described as a mixture, containing specially prepared chicken and rice, which are initially prepared separately before being blended together. For all of those, who are interested in knowing how to make biryani at home, here is the answer.

 

Recipe for Chicken Preparation

Ingredients

  • Chicken – ½ kg
  • Ghee/White oil – 100 gm
  • Onion – 2 (Large size)
  • Ginger – 25 gm
  • Garlic – 7 to 8 big sized cloves
  • Tomato – 1 (Large size)
  • Water -1 cup

Masala Components

  • Green Cardamom – 8 to 10 pieces
  • Chilli powder – 5 gm
  • Cinnamon – 1 stick (5 gm approx.)
  • Clove – 6 to 7 pieces
  • Star anise – 2 pieces 
  • Cumin powder – 5 gm
  • Coriander powder – 10 gm
  • Turmeric powder – 5 gm
  • Salt – 5 gm (can be altered as per taste)
  • Sugar – 1 teaspoon

 

Method for Cooking Chicken

  • The onion is cut into small pieces and a smooth paste of ginger and garlic is made. Cardamom, Cinnamon, Clove & Star anise mentioned previously is crushed, by a grinder to turn into a powder form.
     
  • The Chicken pieces are washed several times with water. Next, the chicken is kept in a plate and marinated by (above mentioned) salt, sugar, turmeric powder, cumin powder, coriander powder and 2 teaspoon oil, ginger, garlic paste, chili powder. All these are mixed together uniformly and kept aside for 1 hour.
     
  • After 1 hour a container is put on a medium flamed oven and Ghee / white oil is poured into it. When these get warmed up adequately, then onion pieces are added to it and the contents stirred. Once the color of onion changes to golden brown color, then the marinated chicken is added to it and stirred constantly, till the chicken preparation takes a total dry form.
     
  • Once it gets totally dry in consistency, then 1 cup of water is added to it, and the powdered masala mentioned previously is also added.The contents transferred to a cooker and allowed to boil, till it gets soft and dry. Next, the oven is switched off and the chicken is kept aside.

Recipe for Biryani Preparation

Ingredients

  • Basmati Rice – ½ kg
  • Milk – 1 cup
  • Kewra essence – 5 to 6 drops
  • Ghee – 100 gm
  • Cinnamon – 1 large stick
  • Black Cardamom – 8 to 10 pieces
  • Onion – ½ kg

Masala Components

  • Sahi Cumin – 30 gm
  • Coriander – 50 gm
  • Black pepper – 50 gm
  • Cinnamon – 2 large stick
  • Green Cardamom – 30 gm
  • Clove – 10 gm
  • Black Cardamom – 50 gm
  • Mace – 10 gm
  • Nutmeg – 1 piece
  • Dry Fenugreek leave – 5 gm
  • Bay leaf – 3 to 4 pieces

Other Supplements

  • Flour (1 cup) & water (as per requirement) for kneading the flour to make a soft dough.
     

 

Method of Biryani Preparation

  • All masala component mentioned above is ground in a grinder and kept aside.
     
  • The rice is washed thoroughly in water, to clean it. Later it is placed in a container containing adequate water and put on an oven with medium flame. 1 teaspoon Ghee & 1 big sized cinnamon stick, 8 to 10 black cardamom pieces are put on it and boiled for 10 minutes till it gets (70%) softened.
     
  • The water is drained afterward and the rice is spread on a plate. The onion is cut into small pieces.
     
  • A Karai (large curved non-stick pan) is put on an oven with a low flame and the karai is greased with little Ghee. The onion pieces are transferred to it and stirred continuously, till they change color to brown.  Then it is kept aside.
     
  • The rice is divided into 4 equal parts and the fried onion into 2 parts.
     
  • Now on a widespread container, a quarter part of the rice prepared earlier was spread all across.  Then a ½ portion of the fried onion is spread over it, over which again another quarter portion of rice prepared earlier is spread evenly. Chicken pieces are spread on the second layer of rice. Next half of the remaining rice, is spread all over the chicken layer over which again the remaining fried onion pieces are spread. The left-over rice is evenly spread above the earlier mentioned layer.
     
  • Ghee is spread on the rice layers.
     
  • 5 to 6 drops of Kewra essence are added to 1 cup milk. Next, the masala powder, which was ground earlier is mixed with milk and this mixture is spread on the whole rice layer, by a tablespoon.
     
  • The container is covered with a lid. The adjoining contact areas are sealed with flour dough mentioned earlier and the container is put on a very low flame oven & cooked for 10 minutes. Later the oven is switched off and the flour dough seal is removed before serving the meal.
